BHE provides pig roasting and BBQ catering, on site or delivered to your event.

Full BBQ Menu and Sides: Delivered Hot to Your Venue
30 person minimum Choose 3 meats, 3 sides and 2 salads. Comes with Southern Style Cornbread. Price includes delivery and buffet style set up at your venue. For Whole Hog contact Big Head Ed.

St Louis Style Ribs
St Louis Style Ribs for catering are trimmed and prepared very similar to our Competition Ribs. A base of Big Head Rub mixed with organic cane sugar and turbidino sugar provide the first layer of our award winning flavor profile. A delicate local honey is drizzled on the ribs and allowed to set for several hours prior to putting the ribs on the smoker. We use hardwood lump charcoal with no fillers along with Apple wood in our smokers. During the cook, the ribs are spritzed with a mixture of local apple cider, cane sugar and melted butter to keep the ribs moist and lay down the caramel color desired by judges. Once the ribs have hit the tender point, they are lightly glazed with our Sweet Nyah sauce. Note: St Louis Style ribs may be a bit longer than baby back (loin) ribs and have less meat on an individual bone.

Baby Back (loin) Ribs
Baby Back Ribs (Loin Ribs) include a portion of the loin muscle and are meatier than St Louis Style ribs. We trim and prepare our catering Baby Backs much like we would for a competition. A base of Big Head Rub mixed with 1 part organic cane sugar and 2 parts turbidino sugar provide the first layer of our award winning flavor profile. A delicate mixture of local honey and maple syrup is drizzled on the ribs and allowed to set prior to putting the ribs on the smoker. We use hardwood lump charcoal with no fillers along with Apple wood in our smokers. These ribs are cooked at a lower temperature than the St Louis Style ribs to give the meat the time and smoke to reach the tender point. During the cook, the ribs are spritzed with a mixture of local apple cider, cane sugar and melted butter to keep the ribs moist and lay down the caramel color desired by judges. Once the ribs are close to hitting the tender point, they are wrapped in foil with apple juice, honey and butter and lightly glazed with our Sweet Nyah sauce. This deepens the tenderness and sets a texture to the meat that is desired. The foil is opened up and another layer of Sweet Nyah is glazed on the ribs. A finishing rub is applied at the very end of the cook to provide another complimentary flavor profile to the final rib.

Pulled Pork
Injected/marinated in apple and peach juice, BHE pork rub with organic turbinado sugar, smoke for 8+ hours over New England apple wood, lightly covered with a peach glaze and served with a mild sauce of organic apple cider vinegar and BHE Sweet Nyah BBQ Sauce.
$10 per Pound.

Lightly Smoked Organic (Pulled) Chicken
From Misty Knoll Farm (Vermont). Brined in organic apple juice/sea salt/cane sugar. Smoked over apple wood and dusted with Big Head Ed Base Rub. Available with Raspberry Glaze upon request.

Beef Brisket
Serves 20-25 Injected with beef broth and dusted with Black Ops Secret Weapon Rub, smoked for 7+ hours over cherry and apple wood, served with Au Jus. Includes burnt ends.

Smoked BBQ Bean
Our Smoked Beans are a simple spin on New England style baked beans. We add some local Maple Syrup, a few spices and some of our BBQ Sauce. The Apple and Cherry wood smoke add a bit of depth.

Traditional Mac and Cheese
A creamy traditional Mac and Cheese that complements the flavors of BBQ. We can also provide Gluten Free Mac and Cheese for another $2/lb

Local Organic Greens Lightly Dressed
We make our salads based on what is locally available at the farms in our area, so the price may vary a bit depending on the time of year. Organic dressings available or you can provide your own.

BBQ Dry Rub
Big Head Ed’s BBQ authentic regional recipe BBQ sauces used in conjunction our Basic Rub mix, will bring out the best in whatever you choose to cook on your grill, in your pit (or in your oven). Adding sugar to the Basic Rub makes it great with pork ribs or pork shoulder. Straight from the bottle, my BBQ friends say its best on chicken wings and salmon.
